PROBLEM TO BE SOLVED: To obtain a composition for effectively preventing change in color in a short time, having excellent storage stability, useful for storing vegetable and fruit for hospitals, restaurants, or the like, by making the composition include Lascorbic acid (salt), citric acid (salt) and calcium chloride. SOLUTION: This composition comprises (A) preferably 20-60 wt.%, more preferably 30-50 wt.% of L-ascorbic acid (salt), (B) preferably 20-60 wt.%, more preferably 30-50 wt.% of citric acid (salt) and (C) preferably 5-40 wt.%, more preferably 10-30 wt.% of calcium chloride. The composition preferably comprises an alkali metal L-ascorbate, citric acid, an alkali metal citrate and calcium chloride in the ratio of the alkali metal L-ascorbate to the alkali metal citrate of 2/1 to 1/2 by weight and in the ratio of citric acid to the alkali metal citrate of 4/1 to 1.5/1 by weight. Preferably, 0.01-20 g of the composition is dissolved in 100 ml of water to prepare an aqueous solution for preserving vegetable, or the like.
