摘要 PROBLEM TO BE SOLVED: To provide a method for adding a liquid additive for producing noodles by which surfaces of boiled noodles or steamed noodles are efficiently coated with an additive such as a pH adjustor for producing the noodles capable of improving the keeping quality of the noodles, a quality improver for improving the loosening properties of the noodles or an emulsified oil and fat. SOLUTION: Boiled noodles or steamed noodles are brought into contact with a liquid additive for producing the noodles on an inner wall surface of a chuter part of an apparatus for producing the noodles. The amount of the liquid additive for producing the noodles is 0.01-15 wt.% based on the boiled noodles or steamed noodles. The liquid additive for producing the noodles can be added to the noodles by a simple mechanism according to the method to prevent a production line from fouling. The environmental protection is excellent due to a small amount of waste liquors.
