摘要 PURPOSE: A process for preparing a sweet drink made from fermented rice including a yam is provided which good for health, treats diseases by the effect of a tonic, discharging phlegm, protecting lungs, and stopping diarrhea by adding a powder of a yam as a saccharifying raw materials. CONSTITUTION: A process for preparing a sweet drink made from fermented rice including a yam is comprised of: pouring 2 times of water by mixing 5-15wt.% of a yam powder after peeling, drying and pulverizing and 35-45wt.% of a rice; soaking the same in the water at room temperature for 1.5-2.5hrs.; making a saccharifying raw material of a sweet drink made from fermented rice after steaming the same at 115-130°C for 8-15min. and cooling; extracting at 55-65°C for 1.5-2.5hrs. by pouring 10times of water into 45-55wt.% of millet jelly; saccharifying at 60°C for 3hrs. by mixing saccharifying raw material of a sweet drink made from fermented rice and the upper part of the extract solution; and adding sugar followed by sterilizing at 100°C for 5min.
