PRODUCTION OF L-ASPARTIC ACID

PROBLEM TO BE SOLVED: To provide a method capable of producing crystalline L-aspartic acid having high purity by using an aspartase without needing a complicated process with excellent working efficiency. SOLUTION: A method for producing L-aspartic acid comprising acting an aspartase on a diammonium fumarate solution to obtain an L-aspartic acid ammonium solution, adding fumaric acid and subsequently crystallizing L- aspartic acid from the solution. In this method, the cooling from the temperature of the fumaric acid addition to the temperature of the aspartic acid separation is carried out at a rate of 0.1-5 deg.C per minute to precipitate L-aspartic acid.
