PROBLEM TO BE SOLVED: To provide spaghetti having the characteristics of both spaghetti and buckwheat noodles and intending health. SOLUTION: This spaghetti is obtained by kibbling general durum wheat, further finely grinding the obtained semolina, sufficiently mixing the obtained 110-150 mesh wheat flour with buckwheat flour and kneading water, and then processing the mixture into noodle-like products by the use of a noodle- producing machine. When the content of the buckwheat flour is increased, buckwheat flour blended with 30-50% of special buckwheat in which starch is converted into α-starch is used. |
