PROBLEM TO BE SOLVED: To obtain a herb-containing pasty food not damaging the color tone and flavor of fresh herb, securing an excellent shelf stability. SOLUTION: A ground material of raw herb is mixed with an oil, sugar and salt to give a paste raw material, which is properly degassed and then packed into a container to produce a herb-containing pasty food. The food characteristically has 5-70 wt.% oil content 5-50 wt.% sugar content, 1-10 wt.% salt content and <=0.8 Aw and the paste raw material is not subjected to heat treatment at >=70 deg.C. |
