PROBLEM TO BE SOLVED: To effectively use the eel heads, as a food, that have been disposed as a waste, and process the heads so that the intrinsic nutrients of the eel heads may not be damaged. SOLUTION: At the first step, a large amount of eels collected are judged whether they are suitable for processing and classified. In the second step, a large amount of eels heads selected at the first step are washed with strongly acidic water, then the washed heads are frozen at the third step. Finally, a large amount of the frozen eel heads are crushed into a powder without heat in the fourth step. The resultant powder in the fourth step is utilized as a food material. |
