摘要 PURPOSE: A process is provided for a good taste apple sweets with 1 millimeter sugar bloom to be excellent in taste and safety of storing CONSTITUTION: A process comprises: removing skin and core; heating for 15min. after putting in 20wt% sugar solution mixed sugar with glucose in a ratio of 2 to 1 and having citric acid and L-cysteine, followed by heating for 15 min. after putting in a 40wt% sugar solution mixed sugar with glucose in a ratio of 2 to 1, in which citric acid and L-cysteine comprise each 0.15-0.3wt% and 0.005-0.02wt%; removing sugar solution by washing out 2 or 3times; drying for 8-10hrs. at 60°C
