PROBLEM TO BE SOLVED: To obtain an embryo anka having strong hypotensive actions and containing a large amount of monacolin K which is a substance for lowering cholesterol and useful for producing foods, processed materials, etc., by using an embryo as a raw material for preparing a koji. SOLUTION: This embryo anka is obtained by using an embryo such as a wheat embryo or a rice embryo as a raw material for preparing a koji and has >=100 mg/100 g dry wt. content of the total monacolin K and >=5 mg/g dry wt. content of glucosamine. The embryo anka is preferably prepared by using a strain such as Monascus pilosus IFO4520 and aerobically culturing the embryo at 15-40 deg.C for 2-20 days according to a solid or a liquid culture method and a processed material is preferably prepared by using the embryo anka as a raw material. |
