PROBLEM TO BE SOLVED: To obtain a foam-containing food capable of being applied to various miscellaneous edible materials and changing a foam fraction and a water content in a wide range and to provide a method for producing the foam-containing food. SOLUTION: This food comprises a dispersion-based composition containing an edible material, foam, water, a trehalose fine particle and a water-soluble polymer (and/or an edible surfactant). This method for producing the food characteristically comprises adding the trehalose fine particle and the water-soluble polymer (and/or the edible surfactant) as a dispersion stabilizer to the dispersion composition composed of the edible material, the foam and water. By this invention, the foam-containing food is applicable to miscellaneous edible materials and food raw materials in various forms. Foam-containing foods having foam fractions and water contents in a wide range can be readily constituted by a series of similar formulations. The foam-containing food having a low fat, excellent palatability and stability and texture which has never existed is obtained and the method for producing the food is provided. |
