Meat product, especially preserved boiling sausage, with less than 0.5 wt. % fat contains 30-77 parts weight meat (50-100 wt.% lean meat, 0-50 wt. % protein), 10-40 parts weight fat substitute (50-70 wt. % water, 5-25 wt. % milk and/or egg protein, 5-25 wt. % vegetable protein), 10-30 parts weight vegetable protein, 1-2 parts weight pickling salt and 2-6 parts weight usual additives. Independent claims are also included for: (a) a fat substitute, especially for making meat products with less than 0.5 wt. % fat; and (b) the production of the fat substitute. |
