In a process to process and conserve meat, pieces (12) of raw meat are brought together e.g. by compression and are heated at below their cooking temperature, 45 deg C to produce a pickled meat product (6). The raw meat is pre-treated with one or more types of salt or pickling fluid. The pieces of meat remain in contact with each other due to electrostatic forces or coagulation.
