PROBLEM TO BE SOLVED: To obtain a separating agent having a highly active oil-water separating function even in seawater without producing environmental hormones from decomposed products by producing a large amt. of polymer substance comprised of sugar and org. acid in a culture medium. SOLUTION: The new polymer substance (APK-78) has the following properties. Namely, the compsn. of sugar and org. acid which constitute the substance consists of (by molar ratio) 1 galactose, 8.2 glucose, 2.1±0.4 succinic acid, and 1.2 pyruvic acid, and its mol.wt. is >=2×106. The viscosity (as 0.5 wt.% concn. soln. of Na-type APK-78 measured by Vismetron (R) rotary viscometer with SS-2-rotor at 25 deg.C and at 30 rpm, using pure water as a solvent) is 250 cp. IR spectral absorption bands (cm-1) are present at 2,700 to 3,700, 1,730, 1,600, 1,400 and 1,160. Microorganisms having the function to produce APK-78 are cultured in a solid or liquid nutrient medium to produce the APK-78 in the medium, which is then extracted and used as the main component of the oil- water separating agent. Some kinds of bacteria can be used as the preferable microorganisms.
