摘要 PROBLEM TO BE SOLVED: To provide a method for treating raw meat, capable of giving thermally cooked meat holding a soft texture, when the raw meat is thermally cooked, and to provide a retort food using meats as a raw material and having a soft, juicy and elastic texture. SOLUTION: This method for treating raw meat comprises immersing the raw meat in an immersing liquid containing a sugar alcohol and an alkali as an essential combination as a preliminary treatment before subjected to a retort heating treatment. The raw meat is meat having good freshness. The immersion treatment is carried out under vacuum. The raw meat treated by either of the above methods is subjected to a retort treatment singly or together with an injection liquid or one or more other food raw materials. The injection liquid contains an alkali.
