PROBLEM TO BE SOLVED: To obtain a new aryl acrylate ester useful as a precursor for sensory receptor compounds, especially a precursor for flavors, fragrances, masking agents, antimicrobial agents and fluorescent whitening agents. SOLUTION: A compound of the formula [A is a benzene ring or a naphthalene ring; R1 is an alicyclic or aromatic 10-30C hydrocarbon; R2 is H, a 1-6C alkyl group or an aromatic group; R3 and R4 are each H, a 1-6C alkyl or alkoxy residue or the like; X is OH or NHR6 (R6 is H, a 1-20C hydrocarbon or the like); the acrylic double bond has an E-stereo configuration]. The compound of the formula can be obtained by a known method, for example, by dropwisely adding and reacting salicylaldehyde to the solution of (carboethoxyethylidene) triphenylphosphine to obtain (E)-3-(2-hydroxy-phenyl)-2-methyl-acrylic acid ethyl ester. The compound of the formula is cleaved under an activated condition to produce the residue useful as a precursor of coumarin having a sensory receiving property, an antimicrobial property and an optically whitening property.
