PROBLEM TO BE SOLVED: To provide a composition selected from a vitamin P potentiation agent, a yellow colorant, an antioxidant, a stabilizer, a quality improver, an ultraviolet ray absorber and a deterioration inhibitor by including α-glycosyl rutin as an active component. SOLUTION: This composition contains α-glycosyl rutin generated by acting a sugar transferase to a rutin-highly containing solution containing highly concentration of rutin and starch, dissolving and including in a high concentration of more than about 1.0 w/v % reduced to rutin under the condition of an aqueous solution near neutral at a room temperature, as an active component, and is selected from a vitamin P potentiation agent, a yellow colorant, an antioxidant, a stabilizer, a quality improver, an ultraviolet ray absorber and a deterioration inhibitor. |
