摘要 PROBLEM TO BE SOLVED: To provide a easy and rapid fermentation method for provide refrigerated bread dough under optimum conditions so that it is possible to provide tasty fresh-baked bread at home. SOLUTION: This fermentation vessel is formed by building a perforated polystyrene plate 3 having a pouring port 2 for hot water into the bottom of a fermentation vessel body shaped with polystyrene so as to have a space to accommodate the hot water, putting the refrigerated bread dough 5 wrapped with an aluminum film 4 on its bottom side on the upper part thereof and putting an upper cap 6 thereon. The secondary fermentation of the bread dough is executed by pouring the hot water to the bottom of such fermentation vessel containing the refrigerated bread dough.
