PROBLEM TO BE SOLVED: To provide a compact and hygienic noodle dough aging apparatus capable of aging a noodle dough, preventing the noodle dough from attaching itself to a transportation conveyor, loosening and hanging, being readily cleaned. SOLUTION: This apparatus is equipped with a multi-stage rope conveyor 20 in the interior of an aging chamber 10 for aging a continuous sequence of a noodle dough (m). A gate 11 for taking in and out the noodle dough (m) is formed at only one position at a proper place of the aging chamber 10. The noodle dough (m) is freely sent from the gate 11 into the interior of the aging chamber 10 and taken out in a reciprocating way. A germicidal lamp 30, a cleaner 40 and a heater 50 are installed in the aging chamber 10. A sensor 60 is set in the vicinity of the rope conveyor 20. When the tip of the noodle dough (m) is detected by the sensor 60, the traveling of the rope conveyor 20 is stopped.
