PURPOSE: Recombinant Acetobacter xylinum is provided by re-introducing the plasmid containing the endoglucanase gene, which id derived from Acetobacter xylinum thereinto. Thereby, cellobiose is mass produced. CONSTITUTION: A mass-production method of the cellobiose using the recombinant Acetobacter xylinum comprises the steps of: cloning beta-1,4-endoglucanase gene, which is derived from Acetobacter Xylinum ATCC 23769 CMCax into a plasmid vector; transforming transforming Acetobacter xylinum ATCC 23769 CMCax with a plasmid containing the beta-1,4-endoglucanase; obtaining the cellobiose from the cellulose, which is over-expressed by culturing the strain.
