PURPOSE: Makkoli is prepared by fermenting without steaming. Thereby, it has rich nutrients and shows high quality. CONSTITUTION: A starch material is steamed and fungus is artificially propagated thereto. The starch is glycosylated then fermented by yeast to prepare raw spirits, followed by that the raw sprits is brewed with water and the steamed material(first brewing process). Washed then crushed rice powder and water are added to the first brewed materials(second brewing process). Air is blown into the second brewing tank by a bubble generator, and the second brewed materials are aged for more than 24 hours to give the rice Makkoli.
