PROBLEM TO BE SOLVED: To obtain the shape and taste closely resembling natural caviare that are fine particle of small artificial fish eggs of <=35 mg having a double- layered structure by using the cuttlefish ink (particularly the melanin pigment in the components) and a small size granulator. SOLUTION: The cuttlefish ink is ground, filtered with >=200 mesh, and the filtrate is adjusted with suitable amounts of table salt, sorbitol and ethanol, then admixed to an aqueous solution containing alginate salt and pectin. The resultant composition is dripped in an aqueous solution containing calcium lactate to form the gelled skin layer and the aqueous solution remaining ungelatized and containing fish or shell essence and other components is encapsulated into small particles. |
