PROBLEM TO BE SOLVED: To produce soybeans for fermentation comprising heated and uncracked grains of soybean having a specific content of aqueous nitrogen, not requiring water immersion for a long time, improved in water-absorbing property and capable of giving a delicately flavored fermented seasoning at a low cost. SOLUTION: The soybeans for fermentation are produced by heating uncracked grains of soybean so as to have the content of aqueous nitrogen <=60% and then pref. by subjecting them to compression or crushing, followed by adding water and by steaming them, and are useful as a raw material for soy sauce, etc. |
