The water heater is gas fired and has pressure regulator (1) on the gas inlet, as well as a buffer volume (3) which eliminates sudden pressure changes to maintain an even input pressure to the burners. The hot water outlet (4) passes through a safety volume (5) which traps any steam produced by the heater. The inlet and outlet of the safety volume are fitted with temperature sensors (a, b) linked to a controller (6) which regulates the size of the gas flame and thereby controls the temperature of the hot water. The selected temperature is controlled to within one degree C either side of the selected level by controlling the gas flame and by pulsing the burners at selected frequencies.
