PROBLEM TO BE SOLVED: To provide a method for producing a cocoa extract generating little precipitation on the bottom of a can, or the like, for a long time and having a good cocoa-like flavor. SOLUTION: This production of a cocoa extract is to adjust the average particle size of powdery cocoa to 4 μm or less by treating a powdery cocoa and/or cocoa cake suspension prepared by using ceramic beads by a wet grinder, centrifuge the obtained powdery cocoa suspension by using a continuous centrifugal separator to remove precipitated materials and recover the supernatant. |
