PURPOSE:To obtain a food pastry suitable especially for the preparation of snack cake, etc., by using sweet potato as a main raw material, heating and cooling the potato, adding a starchy raw material, etc. thereto, and kneading and gelatinizing the mixture under the pressure of steam. CONSTITUTION:Sweet potato is washed with water, skinned, heated in water of preferably 60-80 deg.C for 10-30min, cooled in water of <=25 deg.C, and added with a starchy raw material comprising preferably wheat starch or flour, rice flour, cor starch or flour, sweet potato starch or flour, potato starch or flour, or a mixture of two or more thereof, together with salt and water. The mixture is kneaded and gelatinized under the steam of 1-5atm. pressure to obtain a food pastry using sweet potato as main material. |
