PROBLEM TO BE SOLVED: To provide a production process for xylitol from D-arabitol that comprises simple steps and can stably produce xylitol in a high yield. SOLUTION: Xylitol is produced by allowing a microorganism that has D- arabitol dehydrogenase activity and D-xylulose reductase (xylitol dehydrogenase) activity and is capable of converting D-arabitol to xylitol, for example, Gluconobacter oxydans or Acetobacter xylinum, to act on D-arabitol in a reaction mixture containing carbon sources. |
