PROBLEM TO BE SOLVED: To provide a method for producing a softened product of a hard collagen having excellent sense of mastication of crunchy feeling such as Auricularia auricula by regulating the hydrolysis condition of the collagen obtained by deliming scales of fish. SOLUTION: Water of about ten times as much as the amount of collagen is added to the collagen after dipping the collagen in a weak alkaline liquid, and after sufficient water-washing and cleaning treatment of the dipped collagen, and the obtained mixture is subjected to a boiling hydrolyzing treatment or a pressurized hydrolyzing treatment to provide the objective insoluble softened product of a hard collagen. |
