PROBLEM TO BE SOLVED: To provide a method for producing buckwheat noodles, capable of obtaining the buckwheat noodles having a smooth texture and a body and maintaining the characteristic flavor of the buckwheat by preparing a viscous solution acting as a binder component, etc., from the buckwheat grains themselves and subsequently using the viscous solution as a component to be added to water. SOLUTION: This method for producing buckwheat flour comprises (a) a process for immersing buckwheat grains 1 having ground shells and/or their divided grains 2 in water for 2-3 days at a relatively low temperature to prepare a viscous solution in which a part of the components of the buckwheat grains is eluted and (b) a process for producing the buckwheat noodles, for example, by adding the obtained solution to water, mixing buckwheat flour with the obtained solution and subsequently kneading the mixture. |
