PROBLEM TO BE SOLVED: To provide a freeze-drying process for gel-form food that hardly causes cracking and deformation even when it is frozen or thawed and can produce again its unique taste and texture. SOLUTION: A gel-form food 1 containing a texture strength-increasing additive is placed on an adiabatic board made of an heat-insulating material and a thermally conductive plate 3 made of a material having high thermal- conductivity is placed on the gel-form food 1 to form a laminate for freezing L. This freezing laminate L is contained in an atmosphere of a cooling gas, frozen, then the frozen gel-form food is vacuum-dried. |
