PROBLEM TO BE SOLVED: To provide a means for preventing the decrease of fragrance and/or flavor components in a pices and/or processed spices by dissipation or transformation. SOLUTION: This composition comprises spices such as spices and herbs and/or a processed spice, and trehalose. The composition is obtained by sufficiently mixing the spices and/or the processed spices with the trehalose, and the dissipation or the transformation of fragrance and/or flavor components in the step for the production or processing, and after forming into a product is prevented. The decrease of the fragrance and/or the flavor components by the dissipation or the denaturation is prevented by allowing the fragrance and/or the flavor components to coexist with the trehalose. |
