PROBLEM TO BE SOLVED: To produce a roast-processed product of a pickled fish, e.g. fish pickled in sake lees, fish pickled in fermented soybean paste, and fish pickled in soy sauce, and having the surface without too scorched parts and a sufficiently heated interior. SOLUTION: This roast-processed product of a pickled fish is obtained by carrying out the first heating of pickled fish by a steaming heating or a microwave heating to heat the interior thereof also, and carrying out roasting and heating to form scorch on the surface of the pickled fish. |
