PROBLEM TO BE SOLVED: To provide a method for producing a buckwheat noodle by which the high quality buckwheat noodle using 80-100% buckwheat flour is produced by a machine while hardly causing an allergy reaction without damaging the texture of the Japanese buckwheat noodle, and further to provide a noodle-pushing machine used therefor. SOLUTION: This method for producing a buckwheat noodle comprises adding 55-75 wt.% water to a buckwheat powder comprising 80-100 wt.% buckwheat flour including inner part powder obtained by milling the center parts of buckwheat seeds to provide a buckwheat noodle dough, inserting the buckwheat noodle dough into a noodle-pushing machine having many extruding openings, adding a pressure of <=22.3 kg per cm<2> area of nozzles to the buckwheat noodle dough to extrude the noodle dough into a hot water having the surface at the distance of <=20 cm from the extruding openings, passing the extruded noodle dough within 15 sec to boil the noodle dough. The noodle-pushing machine has an extruding opening 6 having each side bent into inside and a rectangle shape having different lengths of the longitudinal side and the lateral side, or a nozzle 7 having many plural kinds of extruding openings 6 having different areas. |
