Disclosed are antifreeze proteins - AFP substances, method for obtaining AFP substances from natural sources, whilst this method comprises stages: a) separating the juice containing AFP substances from the natural source; b) thermal treatment of the natural source or the juice containing AFP substances by heating up to the temperature 60 C; c) removing the non-soluble fraction. Disclosed is also vector, transformed organisms, frozen confectionary products and mixtures containing these AFP substances.
