PROBLEM TO BE SOLVED: To obtain frying oil that gives good melt in mouth, good taste and good texture with no greasiness, and reduced adhesion to hands, dishes ad packaging bags by containing a prescribed amount of oil and fat and having an SFC value at a prescribed and lower level. SOLUTION: This oil for frying contains >=50% of the oil that is prepared by subjecting a mixture of 40-100% of coconut palm oil and fat and 0-60% of liquid oil as rape oil to ester interchange reaction using 1,3-specific lipase, 4-10%, based on the total amount of the lipids, of tri-saturated triglycerides of 16-22C saturated fatty acids, and has <=7% of SFC(solid fat content) at 35 deg.C. In a preferred embodiment, extremely hardened oil is added instead of the tri-saturated fatty acid triglyceride. |
