PROBLEM TO BE SOLVED: To obtain a new protein having an emulsion-breaking activity and useful for foods, detergents, medicines, etc., by having a specific amino acid sequence and a lipase activity. SOLUTION: This new lipase has an amino acid sequence of formula I or II or an amino acid sequence of formula I or II wherein one or more amino acids in the amino acid sequence are deleted, added and/or substituted by other amino acids, and further has a lipase activity. The protein is preferably obtained by culturing a host cell transformed with a vector containing a DNA encoding the protein, and is preferably added to a detergent. |
