PROBLEM TO BE SOLVED: To obtain a sterilized spice powder such as curry powder having high quality in view of taste, flavor and water content by heat-treating a powdery raw material in a twin-screw extruder, subjecting the material to the primary cooling in the extruder and carrying out the secondary cooling in a separated cooling apparatus. SOLUTION: A powdery raw material is heat-treated in a twin-screw extruder, subjected to the primary cooling to <=80 deg.C in the extruder keeping the closed state and further subjected to the secondary cooling (preferably to <=40 deg.C) in another cooling apparatus such as an apparatus for the indirect cooling with a heating medium. Preferably, the primary cooling treatment is performed by a pineapple forward screw and/or a kneading disk of a twin-screw extruder. |
