The invention relates to vegetable GntI sequences, especially vegetable nucleic acid sequences coding the enzyme N-acetylglucosaminyltransferase I (GnTI), DNA sequences derived therefrom including GntI antisense and sense constructs, and the products thereof, antibodies directed against these translation products and to the use of sequence information to obtain transformed micro-organisms and transgenic plants including those with reduced or a lack of N-acetylglucosaminyl -transferase 1 activity. Such plants with a reduced or lack of N-acetylglucosaminyl -transferase 1 activity are highly important for the production of glycoproteins having a specific constitution in relation to sugar residues.
