PROBLEM TO BE SOLVED: To obtain a noodle discoloration-preventing agent having an effect for preventing the discoloration of noodles with the lapse of time, capable of giving the noodles good in quality, having excellent preservation stability and useful for Japanese buckwheat noodles and so on by including edible fibers as an active ingredient. SOLUTION: This agent for preventing the discoloration of noodles contains edible fibers such as soybean edible fibers or corn edible fibers as an active ingredient and preferably further a thickening polysaccharide such as alginic acid or xanthan gum. The agent for preventing the discoloration of the noodles is preferably added to a flour of raw material in an amount of 1-10 wt.%, preferably 2-5 wt.%, based on the flour of raw material to prepare the noodles whose discoloration is prevented. |
