A process of preparing sterol glycosides in a form that is easily absorbed through the digestive tract, and methods of treating cholesterolemia by administering a composition which includes at least one glycoside or glycoside ester of a steryl glycoside selected from a group consisting of beta -sitosteryl- beta -D-glycoside, stigmasteryl- beta -D-glycoside and campasteryl- beta -D-glycoside and saturated steryl glycosides corresponding thereto.
