The cooking oven has a compressor (10) to raise the temp. of the heat carrier fluid of hot air and/or steam by compression. It is positioned upstream of the heat carrier (3) round the recirculating fan blower (2). The heat carrier fluid is heated by a process heat carrier (16) and a regenerator (18) upstream of the compressor (10).
