PROBLEM TO BE SOLVED: To obtain a herb-containing noodle, excellent in flavor and texture without losing an aroma for a long period, emphasizing the color of the herb, remarkably improved in merchandise value and suitable as a wheat noodle or the like by formulating a raw material wheat flour with a herbaceous powder in a specific proportion. SOLUTION: This herb-containing noodle is obtained by formulating (A) 100 pts.wt. raw material wheat flour with (B) >=0.01 pt.wt. herbaceous powder prepared by drying a flower of a lavender or the like by freeze-drying or the like and powdering the dried flower or formulating (C) >=0.001 pt.wt. herbaceous oil extracted from the flower of the lavender or the like therewith. The herb- containing noodle is preferably prepared by formulating 100 pts.wt. raw material wheat flour with >=0.01 pt.wt. herbaceous powder or producing a noodle containing >=0.001 pt.wt. herbaceous oil formulated therein and, as desired, dusting a dusting powder containing the herbaceous powder and/or the herbaceous oil formulated therein on the resultant noodle strips. |
