Sterilization of food products before packaging

Product for treatment (1) is divided (D) into portions in individual containers (4) and carried through a sterilizing process (S). The containers are open and may be perforated to enhance free flow of thermal liquid around the product. After sterilization the product is transferred (C) to its packaging (3) and a sauce (27) may be added (A). The flexible packaging and sauce have been sterilized separately and transfer is carried out aseptically.
