PROBLEM TO BE SOLVED: To obtain a recombined powdery milk enriched in the lipid content to obtain recipes for special diet, products for cooking and coffee base by using usual installation in no need of expensive spray drying process under mild conditions by mixing a specific emulsion containing lipid with powdery milk and drying them. SOLUTION: An aqueous solution of an emulsifier (suitably sodium casein or the like) is mixed with a lipid phase (such as milk fat or palm oil) and homogenized to prepare a stabilized emulsion of 50-70 lipid content, <=35% of water and 1-5% of the emulsifier. The resultant emulsion is admixed to a composition selected from powdery milk, powdery sauce and coffee base powder and the mixture is dried to prepare a powder of 2-5% moisture content. The emulsion is homogenized by using a homogenizer under the maximum pressure of 300 bar. In a preferred embodiment, the powdery milk or the like and the emulsion are mixed in a coagulation chamber at a weight ratio of 1/1-6/1. |
