PROBLEM TO BE SOLVED: To obtain the subject compound having physiological action on an industrial scale at a low cost by reacting a carbohydrate and glyoxylic acid with a recombinant microorganism containing (S)-4-hydroxy-2-ketoglutaric acid aldolase gene. SOLUTION: The objective optically active compound is produced on an industrial scale at a low cost by reacting a carbohydrate and glyoxylic acid with a recombinant microorganism [e.g. Escherichia coli NHK40 (FERM BP-5919)] produced by introducing a recombinant DNA containing (S)-4- hydroxy-2-ketoglutaric acid aldolase gene into a host in an aqueous medium in the presence or absence of an amino group donor and collecting optically active (S)-4-hydroxy-2-ketoglutaric acid formed in the aqueous medium or a compound obtained by using the (S)-4-hydroxy-2-ketoglutaric acid as a precursor [e.g. 4(S)-hydroxy-L-glutamic acid].
