PROBLEM TO BE SOLVED: To supply soybean processed food product like cooked green soybeans having taste and texture like cooked green soybeans (EDAMAME) throughout the year in low costs. SOLUTION: After matured soybean grains 11 are allowed to absorb moisture in a high-temperature and high humidity atmosphere until the water content is raised higher than 7%, these matured soybean grains are charged in a culturing vessel and the water at about 20 deg.C is given every 3-5 hours. At this time, the atmospheric temperature is set a little higher than the water one to germinate the soybean 11 and cultured until the length of he germs becomes 2-7 mm 12 thereby increasing vitamins, hexanal substance having taste of unmatured soybeans), a variety of amino acids (flavor-enhancing components). This germinated soybeans 12 are heated for about 5 minutes, softened at the same level of the boiled green soybeans to produce the objective soybean processed product having the same taste and texture as those of EDAMAME. This processed soybeans can be produced in low costs throughout the year in a very small space and supplied to the market. |
