PROBLEM TO BE SOLVED: To produce aseptic and clean early cookable rice by washing rice with jetted water and ultrasonic waves, thereby completely removing the residual aleuron layer or sticking agrochemicals of polished rice, reducing oil and fat ingredients on the surface, directly carrying out the centrifugal dehydration just after the washing, reducing the moisture and then pregelatinizing starchy substances on the surface of the milled rice by heating with a high-frequency electric field and far infrared rays. SOLUTION: This apparatus for producing aseptic early cookable rice is obtained by combining a jetting and washing device 1 for washing polished rice with a washing device 2 having an ultrasonic oscillator, a high-speed centrifugal dehydrator 3 and a heating device 4 with a high-frequency electric field and far infrared rays. Since rice bran is not contained at all and the residual aleuron layer is absent, the resultant cooked rice is tasty. Since oil and fat ingredients are reduced, oxidation is not caused. Since the surface is pregelatinized, the grain cracking does not occur and the rice can early be cooked. Since the finishing is provided in an aseptic state, the rice is capable of withstanding preservation for a long period. |
