The invention concerns a method which consists in emitting, inside a ring-shaped cavity (21) of the flange (14), towards the volume to be controlled, at least an ultrasonic beam, such that the beam passes axially through the flange (14) thickness; then in moving the beam towards the ring-shaped cavity circumferential direction and by pivoting, radially relative to the flange (14), collecting the ultrasonic waves reflected by the controlled part and by possible defects, inside the ring-shaped cavity (21), in the form of signals and processing the obtained signals to detect defects in the flange (14) controlled part and calculate their dimensions. Preferably, the control device comprises several slides (26) mobile on a rail (28) moved in rotation coaxial to the flange (14) each bearing a control attachment (25) with a transducer (40), so as to carry out the control with ultrasonic beams having different gradients.
