摘要 PROBLEM TO BE SOLVED: To provide a method for producing noodles, by which the noodles hardly having feeling rough to the tongue and having good texture is produced when forming the noodles by adding a high amylose starch containing a hardly digestible starch. SOLUTION: Water is added to a high amylose starch containing a hardly digestible starch and the particles thereof are swelled. Thereafter, the hardly digestible starch with water is mixed with flour and other materials, and the mixed material is formed into noodles in a conventional method in the method for producing the noodles. The water is added to the high amylose starch containing 45-90 wt.% hardly digestible starch and the particles thereof are swelled. Thereafter, the hardly digestible starch with water is mixed with the flour and the other materials, and the mixed material is formed into noodles in the conventional method.
