PROBLEM TO BE SOLVED: To obtain a low protein and low phosphorus rice having good properties for boiling the rice, capable of providing a delicious boiled rice by cooking the rice by a conventional automatic rice cooker and further being intended to reduce an allergen content. SOLUTION: This low protein and low phosphorus rice 13 is obtained by removing the whole of pericarp and testa, and albumen especially at the side surface 5 part of a rice grain from an unpolished rice. |
