The invention concerns an aerobic biodegrading method for lipid compositions which consists in putting in a reactor (1) an amount of bacterial biomass, and sequentially supplying the reactor with the medium to be treated. If the amount of foam formed at the reaction medium surface exceeds a predetermined threshold, a regenerating step is carried out during which the reactor (1) is supplied with aqueous lipid medium so that the amount of foam is reduced to less than the threshold amount. The invention also concerns a plant for implementing the method.
